Chicken and Mushrooms Stir Fry

An easy mid-week easy to rustle up meal. 


Chicken Breast pieces cut in steips (from one breast)  or you can use thigh pieces
1 tsp ginger and garlic paste
Peanut oil about 2 dsp or any cooking oil of your choice except olive or coconut oil 
1 sliced garlic
1 knob diced ginger
1 Sliced white onion
Sliced Button Mushrooms- 4 or 5 
1 Sliced white onion
1 green onion -white part diced green part cut into 2 inch stips
Dry spices: 2 pinches Chinese all spice powder and 1/4 tsp white pepper
1 dsp Soy light soy sauce
1 dsp Oyster sauce
Salt to taste


Cut the chicken into strips
Marinate the stips with the ginger garlic paste of minimum half and hour
In a hot stir fry pan add the peanut oil 
Add the sliced ginger and diced garlic and stir for a minute
Add the white onions and diced green onions(white part) and saute them for a few minutes till tender and translucent
Add the dry spices and stir them in
Add the mushrooms and stir fry them for about 2 minutes
Add the chicken and cook till tender 
Add the salt soy sauce and oyster sauce
Lastly add the green onion strips

Serve hot with white rice. noodle or just on it's own
